Following this Malt-O-Meal Magic Muffins recipe, I made a batch of nutritious muffins this morning to have with coffee (one rounded tablespoon coffee grounds per cup). A lot of people hate hot cereals because of their slimy nature, but they’re full of important minerals, especially iron, needed for the day’s energy. It was really simple and fast to whip these up. Tip: Spray Pam on the tins and put the tins in the freezer for 30 minutes before baking for non-stick. After baking, twist each muffin to get it out for the perfect muffin. They’re perfect and don’t fall apart at all. Great with morning coffee with jam on them! You could drop some blueberries in the batter to upgrade them.
